Beef Steaks with Stilton Sauce
Feeds 2 ( increase quantity for more people )
Time to cook: 2 minutes (Rare)
4 Minutes (Medium)
6 minutes (Well Done)
Cut : Sirloin or rump
Cooking times are for a fillet steak approx 2cm thick. Your steak will need to be cooked according to it's thickness.
Ingredients:
• Beef Steaks - Sirloin, rump or fillet are best
• Oil
• Red Onion
• Stilton Cheese
• Soft Cream Cheese
• Semi-skimmed milk
• English mustard
METHOD:
Heat a table spoon of oil in a pan and cook 2 lean beef steaks according to table above, along with 1/2 red onion, cut into thin slices. Once cooked, removed from the pan and keep warm.
Add to the pan 50g (2oz) Stilton cheese, 30ml (2tbsp) soft cream cheese, 15ml (1tbsp) semi-skimmed milk and 5ml ( 1tsp) English mustard, Heat gently for 1 minute.
SERVE: Serve the steaks with sauce poured over, red onions, new potatoes and seasonal veg.
Tip: Place the steaks into very hot oil and follow cooking times above. You want a crispy almost burnt outside but for the meat to be cooked as you like inside.
